HAWAIIAN CARROT BREAD | |
2 c. flour 2 tsp. baking soda 2 tsp. cinnamon 1/2 tsp. salt 1 c. chopped nuts 1 c. vegetable oil (Wesson) 2 tsp. vanilla 1 1/2 c. sugar 2 c. grated carrot 3 eggs 1 c. white raisins 1 c. coconut Sift dry ingredients. Add nuts, oil, vanilla, eggs, sugar, carrots, raisins, and coconut. Blend well. Pour into a greased 9x5x3 inch loaf pan. Let stand 20 minutes BEFORE baking. Bake for 1 hour in a preheated 350 degree oven. Cool in pan for 15 minutes before removing from pan to cool completely. Slice when cool. Makes 1 loaf. |
