BANANA CARROT BREAD | |
1 c. mashed bananas (2 or 3) 1 c. sugar 3/4 c. oil 2 eggs 2 c. flour 1 tsp. baking soda 1/2 tsp. salt 1/2 tsp. cinnamon 1 c. finely grated raw carrot 1/2 c. chopped nuts In large bowl, combine banana, sugar, oil and eggs. Beat with mixer for 2 minutes. Stir together flour, soda, salt and cinnamon. Fold into banana mixture. Stir in carrots and nuts. Place in greased and floured 9 x 5 inch loaf pan. Bake in 350 degree oven for 55 to 60 minutes. Cool in pan 10 minutes; remove and cool on rack. Wrap and store overnight before cutting. |
