BANANA CARROT BREAD | |
1 c. mashed bananas (2 to 3 bananas) 1 c. sugar 3/4 c. vegetable oil 2 eggs 1 3/4 c. flour 1 tsp. baking soda 1/2 tsp. salt 1/2 tsp. cinnamon 1 c. finely grated raw carrot 1/2 c. chopped pecans Combine bananas, sugar, oil and eggs in large mixer bowl; mix for 2 minutes. Combine dry ingredients and stir to blend. Add to banana mixture; stir until just blended. Fold in carrots and pecans. Pour into greased and floured 9 x 5 x 2 3/4 inch loaf pan. Bake at 350 degrees for 55 to 60 minutes. Cool in pan for 10 minutes. Remove to wire rack and allow to cool completely before cutting. Makes 1 large loaf. |
