CRISPY OATMEAL COOKIES 
1 1/2 c. sifted flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
2 c. brown sugar
1 c. shortening
2 eggs, beaten
1 tsp. vanilla
3 c. quick cooking rolled oats

Sift flour, salt, baking powder, soda together 3 times. Cream sugar and shortening. Add beaten eggs, vanilla and beat well. Stir in dry ingredients and rolled oats. Chill dough, form into walnut size balls. Roll in powdered sugar. Press down. Bake at 375 degrees for 8-10 minutes.
