UNCLE TOM'S IRISH SODA BREAD 
4 c. flour
1/4 c. sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. baking powder
1 tsp. caraway seeds (optional)
1/4 c. butter
2 c. raisins
2 eggs
1 1/3 c. buttermilk

Mix first 6 ingredients. Cut in butter. Add raisins. Beat 1 egg into buttermilk. Add to dry mixture and mix with wooden spoon.

Turn onto a lightly floured board. Knead about 25 times. Shape into round loaf. Make two cross cuts on top, 4 inches long and 1 inch deep. Mix 1 egg with 2 teaspoon water and brush on top of loaf. Place on greased cookie sheet and bake at 350 degrees for 1 hour. Or make two smaller loaves. Bake on pie plates for 3/4 hour.
