SQUASH CASSEROLE 
7-8 med. size squash
1 tbsp. salt
1 med. onion, chopped
1 bell pepper, chopped
1 or 2 jalapeno peppers (optional)
1/4 stick butter
10-12 crackers
1 sm. box Velveeta cheese
1 tsp. paprika

Cook squash with onion, bell pepper, and 1 tablespoon salt until done. Drain. Pour in 2-quart casserole dish. Slice the 1/4 stick of butter on top of squash. Slice the Velveeta cheese and layer it on top of casserole along with the jalapeno peppers. Crumble crackers on top of casserole. Sprinkle with paprika. Bake in 350 degree oven for 15 minutes.
