RICE - VEGETABLE PILAF 
1 1/3 c. water
1 tsp. chicken flavor bouillon granules
1/2 c. long-grain rice, uncooked
1 1/2 c. fresh mushrooms, sliced
1 1/2 c. carrots, coarsely shredded
1/2 c. fresh parsley, chopped
1/3 c. green onions, thinly sliced
1/4 tsp. pepper
1/4 c. pecans, chopped, toasted (optional)

Combine water and bouillon granules in a saucepan. Bring to a boil. Add rice, cover, reduce heat and simmer 20 minutes. Remove from heat, let stand 5 minutes. Add mushrooms and next 4 ingredients, stir well. Place over low heat, cover and cook 5 minutes. Sprinkle with pecans. Serves 8.
