“DAD'S HOMEMADE PANCAKES” IS IN:

DAD'S HOMEMADE PANCAKES 
1 cup all-purpose flour
1 tbsp. baking powder
1/2 tsp. baking soda
2 tbsp. vegetable oil
3 tbsp. sugar
1 cup milk
1 egg
1/2 tsp. salt

Combine dry ingredients. Add milk, egg and oil. Mix until smooth. Heat non-stick pan over medium heat until water beads. Do not oil. Pour pancake mixture in 1/4 cup amounts. Turn when tops are covered with bubbles and edges look cooked. Remove from heat when pancake stops steaming.

HOMEMADE SYRUP:

1 cup water
1/2 tsp. maple flavoring
2 cup sugar

Bring water to boil. Add sugar and flavoring. Stir to dissolve. Cook 1-2 minutes stirring constantly.

These were the perfect start to a chilly, rainy Saturday morning; I mixed the dry ingredients and then whisked the egg and sugar and added a tsp of vanilla, then the milk and oil last. Excellent - light and fluffy!!

Hmmmmmm... The middle griddle on our stove can only be used for meat and non-dairy in our house...

Commercial mixes have milk in 'em... Not so when I can make the mix myself, using SOY milk...

Thanks for the "homemade pancake recipe"... My wife and ESPECIALLY my in-laws are pleased!

And the pancakes taste soooooooo good!

I love how versitile this recipie is!! I doubled the batch and added nutmeg, vanilla, cinnamon and ground cloves then split it in half and added chocolate chips to the kids half and chopped pecans to the adults half. Not a crumb left on any plate in the house! Thank you DAD!!
