ARTICHOKE NIBBLES 
2 jars (6 oz. each) marinated artichoke hearts
1 sm. onion, finely chopped
1 clove minced garlic
4 eggs
1/4 c. FINE bread crumbs
Pinch of salt, pepper, oregano
1/8 tsp. hot pepper seasoning
2 c. shredded sharp Cheddar cheese
2 tbsp. parsley

Drain marinade from 1 jar (discard from other). Cook onion and garlic in marinade until onion is limp.

In bowl, beat eggs with fork. Add crumbs and seasoning. Stir in onion mix, cheese, parsley and chopped artichokes.

Pour in greased 7x11 inch pan. Bake at 325 degrees uncovered for about 30 minutes or until set. Serve warm, cold, or re-heated.
