ARTICHOKE SQUARES | |
2 (6 oz.) jars marinated artichoke hearts, chopped fine 1 sm. onion, chopped fine 1 clove garlic, minced 5 eggs 1/3 c. dry bread crumbs 1/4 tsp. salt 1/4 tsp. pepper 1/4 tsp. oregano 1/4 tsp. Tabasco 1/2 lb. sharp cheddar cheese, grated 2 tbsp. parsley, chopped 2 tbsp. Parmesan cheese, grated; optional 1. Drain marinade from 1 jar of artichokes into a frying pan. 2. Drain off remaining jar of artichokes. 3. Saute chopped artichokes, onion, and minced garlic in marinade until lump. 4. Beat eggs with fork, add bread crumbs, salt, pepper, oregano, Tabasco, cheddar cheese, and parsley. 5. Add sauteed artichoke mixture to egg mixture. 6. Pour into slightly buttered 7 x 11 inch baking pan. Sprinkle top with Parmesan cheese. 7. Bake in preheated 325 degree oven for 30 minutes. Remove from oven and cut into 1 1/2 inch squares. 8. These can be served hot or cold. |
