HOT ARTICHOKE CHEESE SQUARES 
1 tbsp. oil
1/3 c. chopped onion
1 clove garlic, mashed
4 eggs
1 (14 oz.) can artichoke hearts, drained
1/4 c. dry bread crumbs
2 tbsp. minced parsley
1/2 lb. sharp Cheddar cheese, grated
1/4 tsp. oregano
Dash salt and pepper
1/8 tsp. Tabasco sauce

Grease a baking dish (7x11). Preheat oven to 325 degrees. In skillet, heat oil and saute onion and garlic until limp but not brown.

Beat eggs to a froth; chop artichokes in very small pieces and add to skillet. Stir onion, crumbs, cheese, parsley and seasonings. Turn mixture into baking dish and bake for 25-30 minutes until set when lightly touched.
