ZUCCHINI ARTICHOKE SQUARES 
2 (6 oz.) jars artichoke hearts, chopped
1 sm. onion, chopped
1 garlic clove, mashed
4 eggs
1/3 c. bread crumbs
1 c. (approximately) coarsely grated zucchini
1/2 tsp. salt, pepper, hot pepper and oregano
1/2 lb. sharp Cheddar cheese, shredded
2 tbsp. minced parsley

Saute onions and garlic in marinade from 1 jar of artichokes. Discard marinade from other jar. Saute for about 5 minutes. Add grated zucchini and cook for 5 minutes. Add chopped artichokes and cook for 5 minutes. In bowl, beat eggs with fork. Add bread crumbs and seasonings. Stir in cheese, parsley, and contents of frying pan. Turn into greased 7 x 11 inch pan. Bake at 325 degrees for 30 minutes. Cool. Cut and serve warm or cold.
