ARTICHOKE SQUARES 
2 (6 oz.) jars marinated artichoke hearts
1/2 med. onion, minced
1 clove garlic, minced
4 lg. eggs
1/4 c. bread crumbs
1/4 tsp. salt
1/8 tsp. ea. oregano, pepper & Tabasco
1/2 lb. sharp cheddar cheese, grated
2 tbsp. minced parsley

Drain marinade from 1 jar of artichokes into small skillet, add onion and garlic, cook gently until onion is transparent. Drain marinade for use as a salad dressing (from other jar).

Finely chop artichokes from both jars. Beat eggs, stir in crumbs and seasonings, then cheese, parsley, artichoke and onion garlic mixture.

Pour into greased 10" x 6" x 1 3/4" baking dish. Bake in 325 degree oven until center feels firm. Remove from oven and let stand 15 minutes before cutting into 1" squares. Serve warm, cold or at room temperature. Delicious each way!
