ARTICHOKE CHEESE SQUARES 
2 (6 oz.) marinated artichokes
1 sm. onion, minced fine
1 clove garlic, minced fine
4 eggs
1/4 c. fine bread crumbs
1/4 tsp. salt
1/8 tsp. each pepper, oregano, Tabasco
2 heaping tbsp. minced parsley
1/4 lb. Cheddar cheese (2 c. grated)

Drain liquid from 1 jar artichoke into frying pan. Drain off other jar and set aside to be finely chopped. Add onions and garlic to liquid in pan and cook until limp. In bowl beat eggs, add crumbs, salt, pepper, oregano and Tabasco. Stir in onion-garlic, parsley, artichoke and cheese. Bake in 7x11 pan at 325 degrees until set about 30 minutes. Cool slightly and cut in 1 inch squares. May be served hot or cold. Reheat 10-12 minutes in oven or 3 to 4 minutes in microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
