CRAB RAREBIT | |
2 tbsp. melted butter 1 1/2 tbsp. onion, chopped 2 tbsp. green pepper, chopped 2 tbsp. flour 1 tsp. salt 1/8 tsp. cayenne pepper 1 tsp. mustard 1 c. tomato juice 1 1/4 c. yellow cheese, grated 1 egg, well beaten 1/2 c. cream 1 c. crabmeat Lightly saute onion and green pepper in melted butter. Mix in flour, salt and cayenne and then add mustard and tomato juice. Simmer and stir until smooth and thick. Add cheese and stir well. Stir in egg, simmer 3 minutes, stirring constantly. Remove from heat. Add cream heated with crabmeat. Serve over toast triangles. |
