SQUASH BAKE 
2 sm. yellow squash, sliced
1 med. zucchini, sliced
1 lg. tomato, peeled & cut into wedges
1 sm. onion, sliced & separated into rings
1 tsp. dried whole basil
2 tbsp. olive oil
2 tbsp. grated Parmesan cheese

Grease a 1 3/4 quart casserole with 1 tablespoon of the olive oil. Combine vegetables and basil with remaining tablespoon of olive oil and toss lightly. Sprinkle with cheese. Cover and bake at 350 degrees for 25-30 minutes or until done. 6 servings. About 35 calories per serving.
