BAKED EGG DISH FOR BRUNCH 
8 slices white bread (remove crusts)
2 (6 oz.) pkgs. shredded cheese
1/2 lb. chopped fried crisp bacon
1 dozen eggs
1 c. milk
1 tsp. salt
1/2 tsp. pepper

Grease a 9"x13" pan (use bacon drippings). Do not use butter. Lay slices of bread on bottom of pan. (Cut bread slices into halves.) Sprinkle with cheese and bacon. Beat eggs, milk, salt and pepper. Pour over bread. Refrigerate overnight. Bake 1 hour at 250 degrees. Serves 6.

I made this egg dish last night for a Christmas brunch at work today. While the dish itself was very good (I added a can of diced green chiles too), I would HIGHLY recommend removing the dish from the refrigerator and bringing it BACK to room temperature before baking. It was NOT done in the 1 hour. I had to turn up the oven to 325 for an addiotional 20 minutes so I could get the dish done and get to work on time.

if usuing a glass pan, best to let warm up before putting in oven.. lol ... run risk of braking the dish and mess in oven.
