OATMEAL COOKIES 
1 1/4 c. flour
1 tsp. baking soda
1 c. butter
1/4 c. white sugar
3/4 c. firmly packed brown sugar
1 pkg. vanilla instant pudding
2 eggs
3 1/2 c. oatmeal
1 c. raisins or nuts (optional)

Mix flour and baking soda. Combine butter, the sugars and pudding mix in a large bowl. Beat until smooth and creamy. Beat in eggs. Add flour mixture, then stir in oats and raisins. Drop on ungreased cookie sheet. Bake at 375 degrees for 10 to 12 minutes.
