SPRINGERLE (German Cookies) 
2 eggs
1 c. sugar
3/4 tsp. anise seed
1 1/4 c. flour

Beat eggs and sugar together for 20 minutes (can use electric mixer on low speed). Add anise seed and stir in the flour gradually. Drop by half teaspoonfuls on lightly greased cookie sheets. Place in refrigerator and let stand overnight. Bake at 325 degrees for 12 minutes or until cookies are pale yellow on the bottom. Makes about 45 cookies.
