2 c. sugar 1/2 c. light corn syrup 1/2 c. water 1/4 tsp. cream of tartar 1 tsp. vanilla Combine sugar, corn syrup, water, and cream of tartar. Place over heat. Stir until dissolved. Cook without stirring to very hard ball stage 265 degrees or until it spins a thread when spoon is lifted from pan. Remove from heat, add vanilla and pour small amounts onto buttered saucers. When cool enough to handle pull between hands until it is snow white and porous. Twist, and cut with scissors, or break into small pieces. Butter hands before pulling, and be sure it is cool enough to handle. Warm but not hot...as it is easy to blister your hands. |
