BAKED MANICOTTI | |
1 lb. Ricotta cheese 1/2 lb. shredded Mozzarella cheese 3/4 c. grated Parmesan cheese (reserve 1/4 c.) 2 eggs 1 tsp. parsley flakes Salt & pepper to taste 1 (15 1/2 oz.) jar or your own sauce 1 pkg. manicotti, cooked & drained Mix together ricotta, Mozzarella cheese, Parmesan cheese, parsley, salt and pepper. Cook manicotti a few at a time, because they tear easily. Drain and place on towel until cool. When manicotti shells are cooled stuff with cheese mixture. In baking dish spread a layer of sauce, a layer of manicotti and then sauce. Bake for 1 hour at 350 degrees. |
