BAKED MANICOTTI 
1 lb. ricotta cheese
1/2 lb. shredded mozzarella
3/4 c. grated Parmesan cheese (reserve 1/4 c.)
2 eggs
1 tsp. parsley flakes
Salt & pepper to taste
1 jar spaghetti sauce (any flavor)
1 pkg. (5 1/2 oz.) manicotti

Preheat oven to 350 degrees. Combine ricotta, mozzarella and Parmesan cheese, eggs, parsley, salt and pepper; mix well. Pour 1/2 cup spaghetti sauce into 11 x 7 inch baking dish. Fill manicotti with 3 tablespoons of cheese mixture and arrange over sauce. Pour remaining sauce over top and sprinkle with reserved Parmesan cheese. Bake until bubbly about 30-45 minutes.

Great recipe for vegetarians and for meatless days, like Good Friday. I like not having to boil the manicotti because this is much easier to fill the pasta.
