COCONUT CREAM PIE | |
2/3 c. sugar 3 tbsp. flour 1 1/2 tbsp. cornstarch 1/4 tsp. salt 2 1/4 c. milk 2 egg yolks, beaten 1 tbsp. butter 3/4 tsp. vanilla 1 c. coconut 9 inch baked pie shell (400 degrees 10 minutes) Combine sugar, flour, cornstarch and salt. Gradually blend in milk. Cook over medium heat, stirring constantly until thick and smooth. Blend small amount of mixture into egg yolks; return to mixture in saucepan, cook 1 minute. Remove from heat, add butter, vanilla and coconut. Pour into baked pie shell. Meringue: 2 egg whites, dash of salt, 1/4 cup sugar, 1/2 cup coconut. Beat stiff. Put meringue on pie, sprinkle with coconut. Brown at 325 degrees for 10-15 minutes. Cool 2 to 3 hours. |
