COCONUT CREAM PIE 
1 baked 9" pie shell
1 c. sugar
6 tbsp. flour
1/2 tsp. salt
2 c. milk
3 egg yolks, beaten
1 tsp. vanilla
1 c. shredded coconut

Combine sugar, flour and salt in top of double boiler over hot water. Add milk slowly and cook 10 minutes, stirring constantly. Pour a little of hot mixture onto beaten egg yolks; add to remaining mixture in double boiler and cook 4 minutes more. Stir constantly. Cool, add vanilla and coconut. Pour into pie shell. Cover with meringue, and sprinkle 1/2 cup of shredded coconut over the top. Bake in slow oven at 300 degrees for 15 minutes or until slightly brown.
