EGGNOG CAKE | |
2 tbsp. butter 1/2 c. whole almonds 1/4 to 1/2 c. candied cherries 1 pkg. yellow cake mix 1/8 tsp. nutmeg 2 eggs 1 1/2 c. egg nog 1/4 c. butter, melted 2 tbsp. rum or 1/4 tsp. rum flavoring Grease a 10 inch bundt pan with 2 tablespoons butter. Press whole almonds and cherries against bottom and sides of pan in a decorative pattern. Dust lightly with flour. Set aside. In a large mixing bowl, combine cake mix, nutmeg, eggs, egg nog, melted butter, and rum or rum flavoring. Beat until smooth, about 4 minutes. Pour batter into pan. Bake in a preheated 350 degree oven 45 to 55 minutes or until cake tests done. Let cool in pan 10 minutes; invert and cool thoroughly on rack. |
