EGG ROLL FILLING 
1/2 lb. fresh bean sprouts
1/2 lb. raw shrimp
3 tsp. oil
1/2 lb. lean boneless pork, finely ground
4 c. finely chopped celery
2 or 3 med. fresh mushrooms, cut into 1/4 inch slices
1 tsp. soy sauce
1 tsp. rice wine (or pale dry sherry)
2 tsp. salt
1/2 tsp. sugar
1 tsp. cornstarch, dissolved in 2 tsp. cold chicken stock (fresh, canned, or cold water)

Heat 1 teaspoon oil in wok or skillet over high heat for about 1 minute; turn down if oil smokes. Add pork; stir fry for 2 minutes or until it changes color. Add wine, soy sauce, sugar, shrimp, and mushrooms. Stir fry for 1 minute or until shrimp turn pink. Transfer contents to a bowl and set aside. Heat remaining oil in skillet or wok. Add celery; stir fry for 5 minutes. Add salt and bean sprouts; mix thoroughly. Add bowl of shrimp etc. and stir until well combined. Cook over moderate heat, stirring constantly, until liquid starts to boil.

There should be 2-3 tablespoons of liquid remaining - if there is more, spoon it out and discard. Add the cornstarch mixture and stir until liquid thickens and coats the mixture. Transfer to a bowl and cool. Then fill wrappers.

ALTERNATE FILLING RECIPES:

1/2 c. shredded pork loin
1 tsp. rice wine, 1/3 tsp. salt, and 1 tsp. cornstarch, mix together to thicken sauce
2 c. bean sprouts
1 c. shredded precooked bamboo shoots
1/2 c. shredded precooked carrot
1 c. shredded, pressed bean curd
1 tsp. salt
1/2 tsp. MSG
1/2 tsp. sugar
1/4 tsp. black pepper
1 tsp. sesame oil

Alternate recipe. You can use just about any mixture of meats, seafoods, or just vegetables.

For sauces, you can use soy sauce (use Kikkoman or some other true soy sauce - don't use "American style soy sauce") or make a hot soy sauce mixture (quantities according to taste)

SOY SAUCE:

Sesame oil
Chopped green onions
Chopped garlic
Chopped red peppers
MSG

Let it sit at room temperature for a few hours.

JAPANESE STYLE:

Fish stock
Soy sauce
Mirin (sweet rice wine)
MSG

SWEET AND SOUR:

1 tsp. chopped green onion
2 tsp. chopped garlic
2 tsp. ketchup
2 tsp. sugar
2 tsp. vinegar
4 tsp. water
2 tsp. cornstarch
Salt
Sesame oil

Heat 2 teaspoons oil and stir fry garlic and ketchup. Add sugar, vinegar, water, and cornstarch. Bring to a boil. Add green onion and sesame oil. Place in small bowl.
