AVOCADO SPRING ROLLS 
1 partially FIRM avocado
2 teaspoons Sun Dried Tomatoes
1 stalk cilantro
pinch sea salt
2 teaspoons white onion (or whatever you may have in the fridge)
Spring rolls (Asian markets)
You can use Egg rolls dough as well, they are vegan when NO egg roll dough is used
I use ORGANIC ingredients

In a bowl, place the tomatoes in 1 1/2 teaspoons of extra virgin olive oil and allow to sit.

Dice onions and mince the cilantro using a sharp knife. Chop your tomatoes, leaving the oil in the bowl! You are about to use it in just a few..) Dice the avocado.

Place all ingredients in a bowl and mix. As you are mixing, add the salt and oil, do not over mix!! Avocado needs to be on the slightly firm side.

Place in extra virgin oil heated in a skillet and cook for about 4 to 5 minutes total.
