SAUSAGE JAMBALAYA 
2 lg. onions
3 stalks celery
1 green pepper
2 cloves garlic
Parsley
2 lb. smoked sausage
2 sm. cans tomato sauce
3 c. rice
2 tsp. sugar
Hot sauce

In a large skillet or Dutch oven brown chopped onion and other seasonings. Add tomato sauce and sugar. Cook slowly for about an hour. Add water if it starts to stick. Separately brown sliced sausage, drain and add to sauce. Cook for 15 minutes. Add rice and 4 cups of water. Cover and cook until water is absorbed. Add salt and hot sauce to taste.
