SAUSAGE JAMBALAYA 
2 lbs. sausage
2 cloves garlic
1 c. chopped onions
1/2 c. chopped celery
1/2 c. chopped bell pepper
1/2 c. green onions, finely chopped
2 c. rice
Salt and pepper to taste
4 c. water

Chop sausage and set aside. In heavy deep pot, put garlic, onions, celery, bell pepper, and green onions. Cook on slow heat for a few minutes. Add sausage and cook on medium heat until sausage is brown. Add 2 cups rice and 4 cups water; bring to boil and stir. Cover pot and cook on low for about 45 minutes or until rice is done.
