CLUB BERRY SPINACH | |
Watch in amazement as your family devours a spinach dish! 4 (10 oz. ea.) pkgs. frozen spinach 12 hard boiled eggs, sliced 1 (16 oz.) pkg. bacon, cooked and chopped into bits 1 medium onion, sliced 1 (8 oz.) pkg. shredded cheddar cheese (You can add sliced American cheese too - YUM!) 2 sleeves of crackers, crumbled 1/2 cup (1 stick) butter, divided garlic powder, to taste Italian seasoning, to taste (McCormick) Greek seasoning, to taste (Cavender's) Cook spinach per package directions. Boil eggs and slice into 1/4-inch slices (only use slices with yolks). Sauté onion in a tablespoon of butter. Cook bacon and crumble into pieces. Prepare 9x13-inch glass dish with non-stick cooking spray (Pam). Press spinach into strainer to drain any excess liquid. Arrange spinach evenly into bottom of dish. Layer with sautéed onions. Sprinkle crumbled bacon evenly over dish. Lay egg with yolk slices over entire dish. Cover with cheddar cheese (and American if you wish). Crush crackers, add butter, remaining seasonings, and mix well. Spread over entire dish. Bake at 350°F for 30 minutes or until crackers are golden brown. Submitted by: John Berry |
