MOLASSES CAKE 
2 c. brown sugar
1 c. butter
1 c. molasses
1 c. strong coffee
4 eggs
1 tsp. baking soda
2 tsp. cinnamon
2 tsp. cloves
1 tsp. grated nutmeg
1 lb. raisins
1 lb. currants
4 c. flour

Mix all ingredients, first the sugar, butter and molasses. Add coffee and eggs, then spices, raisins, currants and flour. Can use all raisins; I like to substitute craisins for the currants.

Bake at 350°F about 50 minutes or 325°F about an hour and 10 minutes. Test center.

Bake in 8 x 12-inch dish or pan. This makes a large cake and will keep or freeze well. Good sliced and served with butter.

Serves 40. Can freeze. Can do ahead.
