MOLASSES CAKE | |
1/2 cup shortening 1/2 cup brown sugar 1 egg, beaten 2 cups flour 2 teaspoons baking powder 1/4 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon cinnamon 1/2 teaspoon ground ginger (optional) 1/2 cup molasses 1/2 cup milk Beat shortening (butter, butter, etc.) until light, gradually adding sugar and beaten egg slowly, beating continually. In a separate bowl, whisk together flour, baking powder and baking soda, salt and cinnamon and ginger. To the first bowl, add molasses, part of the flour mixture and the milk, beating between each addition. Add remaining flour mixture, stir well but do not beat. Bake in a greased shallow pan in a preheated 325°F. for about 40 minutes or until cake tests done. Serve while still warm from oven with butter, whipped cream, or vanilla ice cream. This cake can also be baked in muffin tins at 350°F for about 20 minutes. Submitted by: Belle |
