ROASTED HARVEST VEGETABLES 
2 cups peeled and chopped sweet potatoes
1 cup peeled and chopped parsnips
2 cups peeled and chopped rutabagas
2 cups peeled and chopped turnips
1 large chopped onion
2 tbsp. olive oil
1 tbsp. salt
1/2 tsp. black pepper

Preheat oven to 375°F.

Combine all ingredients well. Pour onto a baking sheet.

Bake at 375°F for 45 minutes.
