APPLESAUCE COFFEE CAKE 
1 3/4 c. all-purpose flour
1/2 c. sugar
1/2 c. (1 stick) butter
2 beaten eggs
2 tsp. vanilla
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 c. chunk-style applesauce
1/4 c. chopped nuts (optional)
1/2 tsp. ground cinnamon

In mixing bowl stir together 3/4 cup of flour and sugar; cut in butter until crumbly. Set aside 1/2 of the crumb mixture for topping. To remaining crumb mixture, add beaten eggs and vanilla; beat by hand until smooth. Stir together remaining 1 cup flour, baking powder, baking soda and 1/2 tsp. salt. Add flour mixture and applesauce alternately to creamed mixture, stirring after each addition. Turn into greased 8x8x2-inch baking pan. Stir nuts and cinnamon into reserved crumb topping; sprinkle atop coffee cake. Bake in 375°F oven for 30 minutes or until done. Serve warm.
