CAESAR SALAD | |
1/3 c. olive oil 2 tbsp. freshly squeezed lemon juice 1 egg 3 slices French bread 1 tbsp. butter 1 1/2 tbsp. oil 1 clove garlic, minced 1 head romaine lettuce 1/4 c. freshly grated Parmesan cheese Mix olive oil, lemon juice and egg in a blender and set aside. Cut bread into squares. Melt butter, then add oil and garlic. Soak squares of bread in butter, oil and garlic. Place on cookie sheet and bake in oven at 350 degrees for 15 minutes or until brown and crispy. Wash and dry lettuce, and tear into bite size pieces. Place lettuce in a salad bowl, sprinkle with plenty of freshly ground black pepper, toss croutons on lettuce, sprinkle with grated Parmesan cheese, and pour dressing over top and toss. Serves 4. |
