TORTELLINI MACARONI SALAD 
1 lb. cheese tortellini (plain or tri-colored)
1/2 c. shredded carrots
1 c. cherry tomatoes, halved
1 can black olives, sliced
1/2 c. chopped onion
1/4 c. fresh basil or 1 tbsp. dry
1/4 c. fresh parsley or 1 tbsp. dry
1 tsp. salt
1 tsp. pepper
1/2 tsp. garlic
1/2 tsp. oregano
3/4 c. oil
1/4 c. vinegar
2 tbsp. lemon juice

Cook tortellini according to package directions. Drain thoroughly. Add other ingredients. Cover and chill.

NOTE: If cherry tomatoes are not available, chopped tomatoes are a good substitute. I have also made it without tomatoes at all and it is just as good.

Especially pretty if the tri-colored tortellini is used. Serves 8.
