TORTELLINI SALAD 
1 lb. tortellini (cheese or meat)
1/4 lb. Prosciutto, cut in pieces
2 whole roasted peppers (sm. jar), cut in sm. pieces

DRESSING:

1/4 c. olive oil
4 tbsp. white vinegar
1/2 tsp. thyme
Salt & pepper to taste
1/4 c. parsley, chopped

Cook tortellini according to package. Let cool to room temperature. Add peppers and Prosciutto. Mix dressing ingredients well. Pour dressing over salad and mix well.
