TORTELLINI SALAD 
1 lb. tortellini (frozen)
1/2 onion (red)
1 jar roasted peppers
1 jar artichokes (in oil)
Black olives
1/2 c. olive oil
1/4 c. vinegar
Salt & pepper to taste
1 tsp. garlic, grated

Boil tortellini in salt water 15 minutes. Drain. Rinse in cold water. Drain again.

In large bowl combine tortellini, chopped onion, garlic and artichokes.

Mix olive oil, vinegar, salt and pepper. Dot over tortellinis; add roasted peppers. Cover. Refrigerate for 1 hour.
