BELLE'S CHEESE AND COCONUT LOG 
1 (4 oz.) pkg. bleu cheese, crumbled
1 (8 oz.) pkg. cream cheese, softened
3/4 tsp. dry mustard
1 1/2 cups flaked coconut, toasted

Cream together bleu cheese and cream cheese until soft. Add dry mustard; mix well. Refrigerate for 30 minutes, then shape into a log about 1 1/2 to 2 1/2 inches in diameter.

Roll in toasted coconut. Cut log into 1/4-inch slices.

Serve with fresh fruit or crackers.

Makes enough to top about 40 crackers.
