PORK AND PEACH BAKE 
1 pkg. stuffing mix for chicken or pork
1/4 c. peach preserves
4 pork chops (1/2 inch thick)
2 tbsp. vegetable oil
1 can (8 oz.) peaches
1/4 c. peach preserves
Parsley sprigs

Make stuffing mix according to package directions (decrease water by 1/4 cup). Stir in 1/4 cup of the preserves. Spoon stuffing into ungreased 1 quart casserole.

Cook pork chops in oil over medium heat until browned on both sides. Arrange pork chops and peaches over stuffing. Spoon 1/4 cup preserves over chops. Bake, covered, in 350 degree oven until chops are tender, 45 minutes to 1 hour. Garnish with parsley. Makes 4 servings.
