PEACH CHICKEN BAKE 
2 whole chicken breasts, split (4 pieces)
1 1/2 lb. sweet potatoes, peeled and sliced
Salt and pepper to taste
1 med. onion, sliced
1/2 c. brown sugar
3 tbsp. honey
1 tbsp. orange juice
1 (16 oz.) can sliced peaches, drained

Heat oven to 375 degrees.

Arrange chicken in one layer in covered dish. Scatter potatoes and onions around chicken, sprinkle with salt and pepper. Cover and bake for 30 minutes. Mix sugar, honey and juice. Drizzle over chicken and potatoes. Bake uncovered 30 minutes, basting occasionally.

Add peaches, gently combining. Bake uncovered 30 more minutes basting occasionally. Arrange on platter and serve.

Can use canned potatoes and cut down baking time.

We made this and loved it! We modified slightly by adding about two tablespoons of balsamic vinegar drizzled over the peaches before the final baking. This cut down just slightly on the sweetness.

Overall a great recipe!

Good recipe that gave me room to be organically creative. Used organic chicken, organic sucunat instead of brown sugar, freshly squeezed juice from two small oranges, one sweet potato, one russet potato and added 2 tbs. of Polish hot mustard to reduce sweetness while giving a little zing.

Read the chicken package before making this. Mine was soupy despite adding cornstarch. I suspect my chicken had added salt and water. Next time I'm going to try dredging the chicken in flour before baking.
