CHINESE CHICKEN SALAD 
SALAD:

Lettuce
Celery
Green onions
Py Fun (Chinese rice sticks)
Chicken
Black sesame seeds
Almonds

DRESSING:

Soy sauce
Sesame oil
Rice wine (sake)
Rice vinegar
Garlic sugar
Salad oil
Dry mustard

Chop lettuce, celery and green onions. Cook and chop chicken. (Marinate chicken in dressing overnight if desired.) Toast sesame seeds and almonds. Fry py fun. Toss vigorously.

Dressing: Portions as follows: 1/3 soy sauce, 1/4 sesame oil, 1/8 rice wine, 1/16 rice vinegar, dash of sugar, dash of dry mustard and 1/4 to 1/2 salad oil. Add garlic to taste.
