CHINESE CHICKEN SALAD 
2 lg. chicken breasts, cooked and shredded
1 1/2 c. finely shredded iceberg lettuce
1 c. celery, cut thin on the diagonal
1 sm. bunch cilatnro
4 stalks green onions, finely chopped
4 tbsp. sesame seeds
4 tbsp. toasted slivered almonds
4 oz. Chinese bean thread

SALAD DRESSING:

Mix together the following:
3 tbsp. sugar
1 tsp. salt
3/4 tsp. pepper
3/8 c. salad oil
4 1/2 tbsp. cider vinegar
1 1/2 tbsp. lemon juice
1 1/2 tsp. dry mustard
1 1/2 tsp. sesame oil

Stew chicken for about one hour. Cool, shred with fingers. Fry bean thread. Toss together chicken, lettuce, onions, celery, cilantro, almonds, and sesame seeds. Add salad dressing and mix well. Add bean thread last, mixing some into salad and saving some to sprinkle on top of each serving.
