RICE AND BROCCOLI CASSEROLE 
1 onion, grated
1 c. rice (after it is cooked)
1/3 c. butter, softened
1 egg, beaten
1 (10 3/4 oz.) can cream of chicken soup
1 box or 1 pkg. chopped broccoli, cooked and drained
1 to 2 c. shredded Cheddar cheese

In large bowl, combine all ingredients, mix well. Pour into a 1 1/2 quart casserole, sprinkle cheese on top. Bake 1 hour at 350 degrees. Cover dish until almost cooked. Then remove cover and let brown a little.
