BROCCOLI RICE CASSEROLE 
1 (10 oz.) pkg. frozen chopped broccoli
1 (10 1/2 oz.) can cream of chicken, celery or mushroom soup
1 1/2 c. cooked regular or Minute Rice
1 sm. onion, chopped
1 tbsp. butter
1/2 c. mayonnaise
1 c. shredded Cheddar cheese OR
1 sm. jar Cheez Whiz
2 tbsp. butter
1/2 c. bread crumbs

Cook broccoli until just tender. Saute onion in 1 tablespoon butter. Cook rice or prepare Minute Rice. Combine all ingredients except 2 tablespoons butter and crumbs (which are sprinkled over top) in a greased casserole and bake until bubbly at 375 degrees for 30 minutes.

VARIATIONS: 1. Use cream of celery soup, add 2 cups cubed ham, 1/4 cup wild rice, and Parmesan cheese in place of crumbs. 2. Use cream of chicken soup, add 2 cups chicken, omit mayonnaise. 3. Add chopped celery and mushrooms. 4. Add 1 beaten egg, omit rice.
