BROCCOLI CASSEROLE 
1 box or 1/2 pkg. frozen broccoli cuts
1 sm. onion
1 c. shredded Cheddar cheese
1/2 c. cooked rice
1 can cream of chicken soup
1 c. Pepperidge Farm stuffing

Saute onion in butter. Add partially thawed broccoli to onion and butter, simmer until partially cooked. Add cheese, rice, soup and 1/3 of stuffing to the mixture. Add the balance of the stuffing on top of the casserole. Bake at 325 degrees, covered, until cooked through and topping is browned.
