CREAMED ONION 
2 dozen sm. white onions, peeled
1/2 c. butter
1/2 c. flour
2 c. heavy cream
Salt & pepper
Dash cayenne pepper
1/2 c. sharp cheddar cheese
1/4 c. butter soft bread crumbs
Water for cooking

Cook onions in water (enough to cover onions) until tender. Drain, keep 1/2 cup liquid. Melt butter and blend in flour. Slowly add cream and liquid, stirring constantly, cooking until smooth and thick. Add cheese. Add salt and pepper to taste and cayenne. Add onions and mix lightly. Pour into baking dish. Top with bread crumbs. Bake at 350 degrees for 45 minutes; cover. Uncover last 20 minutes to brown top.
