SWEET POTATO CASSEROLE | |
6 lbs. sweet potatoes (4 lg. cans) 4 eggs 1/2 c. brown sugar 1/2 c. butter, melted 2 tsp. salt 2 tsp. cinnamon 1/3 c. pecan halves 1/2 c. brown sugar 1/4 c. butter, melted Drain and mash sweet potatoes. Beat in 4 eggs, melted butter, salt and cinnamon. Put in casserole. Arrange pecan halves on top, sprinkle with 1/2 cup brown sugar and drizzle with 1/4 cup melted butter. Bake for 30 minutes at 375 degrees, uncovered. Serves 15. Pecans can be omitted. You can decrease the butter and put marshmallows on for the last 5 minutes. |
