RASPBERRY SQUARES 
1 c. butter
1 c. sugar
1 tsp. vanilla extract
1 egg, beaten
1/8 tsp. salt
3 c. flour
2 tsp. baking powder
12 oz. jar raspberry jam
4 tbsp. confectioners' sugar

Preheat oven to 350 degrees. Grease 13 x 9 x 2 inch pan. Mix wet ingredients together; mix dry ingredients together. Spread 1/2-3/4 of the dry ingredients in bottom of pan. Spread jam evenly on top of dry ingredients, sprinkle jam with remaining dry ingredients. Sprinkle with confectioners' sugar. Bake 20-25 minutes; at the most, 30-35 minutes. Note: 3/4 cup coconut can be substituted for 3/4 cup of the flour.
