BROCCOLI-RICE CASSEROLE 
1 1/2 lbs. ground beef
3/4 c. raw rice
1/2 stick butter
1/2 c. diced celery
1/2 c. diced onion
1 (16 oz.) pkg. frozen broccoli
1 can cream of mushroom soup
1 (8 oz.) jar Cheese Whiz (mild Mexican)

Cook raw rice according to your favorite method. Brown ground beef and drain. Lightly saute celery and onions. Cook broccoli according to directions. Mix hot rice and Cheese Whiz with butter. Add cooked ground beef, sauteed celery, sauteed onions, undiluted soup, cooked broccoli (if spears, cut into smaller pieces) and mix well. Place in 2 quart casserole. Sprinkle top with buttered bread crumbs (optional). Bake at 350 degrees for 1 hour (35 minutes covered and uncover last 25 minutes).
